Potato – How to Eat a Tuber – more than 220 ways

As early as 1000 BC, people in the present-day Peru were growing potatoes.  Europeans in 1500s did not know much about tuber-producing plants, but the climate was perfect for potatoes.  
This class will explore the many, many ways to eat a potato.  It will also touch on the history of the potato and how Americans embraced its versatility.
